Uttapam
Now this is a proper pancake. Popular in the southern states and made of a think, hearty rice and urad dal. Unlike its sweet western counterpart, this pancake is usually cooked with onions, chillies and tomatoes. A splash of jaggery or coconut may satisfy your sweet tooth though.
Dosa and Chutneys
If it’s not a meal to you without some carbs, why not try a dosa? Similar to the uttupam, only much thinner and resembling a crepe, they are made from fermented rice and dal butter – making them an excellent source of protein too! You can stuff your dosa with vegetables like potatoes, or dip them straight into your chutneys. Delicious – and you can keep your raspberry jam!
Masala Omelette and Pani Puri
Much healthier than a heavy, greasy dish of oily fried eggs, this omelette mixes all the best masala blends and brings a whole new dimension to your meal time. Adding pani puri on the side gives extra texture and will help fuel you to lunch time.
